2013 Plans?

Lunch:Rosemary and Garlic Pork, with some satueed corn with butter. Also, a little veggie salad with hummus dressing.

Turned out pretty good, a trick I’ve learned with cooking pork is the slower you cook it the softer it will be. Pork has a bad habit of being a chewy. I generally cook mine on about 3.5 on the stove, it takes longer with the pork is a little easier to both eat and cut up. The corn was just out of a can, but I like the sautee my canned veggies. So I put in a little – emphasis on little – bit of butter, some garlic salt & lemon pepper until it started to brown a little and pulled it off. Delicious!

I’ve also noticed I’m better with my portions if I use the appetizer plates instead of the dinner plates. I always put more on my plate than I need – hence why I get full every time instead of just satisfied.

Plans

I was thinking I need something to plan for this year. Not sure what, I’m thinking maybe I will pick up running again. I went through a period of being very frustrated with running – either because of boredom or injury. I’m starting to get back my motivation for it, so I think I might pick it up again and maybe pick a race a few months down the road to try.

It would be cool if I could do the Columbia Crossing 10k again in Astoria. My last run there left much to be desired since I had stopped running 2 weeks before the race due to runners knee from using the wrong kind of shoes for 2 months. (Trust me, those minimalist shoes aren’t for everyone) So when I ran I hadn’t been running for a while, and even before that my longest run had only been 5 miles and I couldn’t do it without stopping. So I was unprepared for the race and I could really feel it in my joints afterwards – my knees and hips and ankles were not happy with me. I finished well though, it took me about 70 minutes to do.

Maybe  try for this? : Amica Seattle Half-Marathon

It’s on December 1st, so 11 months away. I’ve never ran more than 3 miles without stopping, and never more then 6.2 miles at one time. Eek! I’ve always wanted to run a half-marathon at least once in my life, but…I mean, 11 months? Doesn’t seem long enough to me.

Online Workouts

So I spend a lot of time at home, and don’t have much time – or money – to travel to the gym as often as I would like.

So I’m going to share with you some of the different online work outs there are. And there are a lot! So no excuse – you can do these at any point in time during the day – when you get up, inbetween laundry loads( 🙂 haha) , or when you get home from work/school.

First one :
Amanda Russell on Youtube. Pretty much all of her workouts can be done at home, and they include a decent variety. Though, sometimes her size freaks me out – she’s tiny!Amanda-Russell

The Daily HIIT for their youtube page, or their website Body Rock. This is a totally free website, and they provide you tons and tons of workouts to do and workout challenges. These are also at-home workouts, but many of them require some kind of equipment like weights.I do warn you though, they don’t appear to believe in a lot of clothes which sometimes bothers me, but the workouts will kick your butt. timthumbCAKM1FAU

Be Fit is a good workout series, and also can be done at the gym if you want, or of course at home.

Now, that’s only three of them. There are a lot, and Youtube houses most of them. There are ones that are just yoga, or pilates, or cardio, or pretty much whatever you want. =) So get out there!

Asian Stir-fry with Udon Noodles

So dinner tonight is going to be a little spicy. 🙂 After much deliberation I decided to make a spicy Asian Stir-fry with Udon Noodles(my favorite!) and a veggie salad.

This is the end product:

Veggies:

  • Onion
  • Garlic
  • Red Pepper
  • Broccoli
  • Carrots
  • Japanese Udon Noodles
  • Image

The Spices:

  • Sweet cooking Rice Wine
  • Sweet and Sour Sauce
  • Soy Sauce
  • Pure Sesame Oil

And don’t forget the Siracha!

Basically what I did was chop/dice the onion and garlic and put that by itself in the rice wine, soy sauce, and sesame oil and let that cook down for few minutes before I put in the veggies. When I put the veggies in I put a pot of water on to boil for the noodles.

Here is the end result! I make sure to spread my noodles out, makes it seem like there is more food and tricking your brain is probably the easiest way to eat less if you’re an over-eater.

And then the salad:

Just a simple salad with diced cucumber, shredded carrots, and cherry tomato halves. Oh, and a dash of sharp cheddar. I mix romaine, spinach, and iceberg for my salad.

I also used my yogurt ranch for a dressing.

So this is basically what I ate for dinner, and I drank the whole water bottle which is 1000ml. I think I drank it all because the stir-fry was super spicy! Not a bad thing but it filled me up real quick and I couldn’t finish my dinner. haha.

So, as for the rest of the day I worked until 4pm and I had a simple turkey cheese sandwich and some veggies and low-fat ranch dip. I drank a lot of water so far today, but no work-out. The last 2 days of Turbofire have left the back of my legs and my entire back super sore so I’m giving myself a few days off before I start at the gym on Thursday.

So how was your Sunday? Did you watch the big Seahawks game? Ugh, I was so disappointed! SO close to winning it was ridiculous! Maybe next year, yeah? 🙂

Lunch Bites =)

This morning I had some motivation and I worked out before I did anything else today. 🙂 I did Turbo Fire’s Low HIIT 25 which is a little over 20minutes. I’m so out of shape even 20 minutes was a little difficult for me to finish, my brain keeps going ‘hey, you’re tired…sooooo why are you still doing it?!’ and I keep having to ignore it. I pushed through it though, and finished.

ImageAfter that I wasn’t even kind of hungry – I wasn’t hungry before or after but I got up pretty late today since it’s my one day to sleep in. 🙂 I had to sleep on the couch because I’m still trying to get the cat pee smell off my brand new bed. I’m trying baking soda on it for a few days, I don’t feel hopeful anymore about ever getting the smell out. I also can’t flip it over because it’s a pillow top. Damn cat.

So anyway, onto lunch!

ImageI had a veggie salad,  and four baby tomatinos with a yogurt ranch for dipping. It was pretty darn delicious and filled me right up. Although I did have an incident with the tomatinos – my microwave broke my plate somehow.

ImageHas your microwave ever broke something like that before? Mine hasn’t. At first I thought the dogs were getting into something, but turns out my microwave is the one being bad.

Eating Healthy and Saving Money

It’s completely possible to shop healthy and not spend all your money.

First step is to make a list of everything you need, make sure to check your house. Just remember, you’re only listing what you need here.

Then you make another list of your wants.

Generally my wants are snack foods, dog toys, etc. I don’t know if you’ve ever had them, but baked snap peas are delicious but relatively expensive.

The next step is to find the closest vegetable stand or farmers market, and go there for your veggies and fruit it almost always is way less expensive than the grocery store. If you want some canned foods or other things, head to your Grocery Outlet store. I know, it’s a strange feeling going to a used-goods store but, I promise, it’s safe.

You can save a ton of money by trying to find everything else you need at stores like this – but beware, often their products in store change because they are stocked by overfill of other stores or damaged packages like dented cans and the like.

After that, asses the damage to your wallet. Make sure you go in mind with a certain amount of money you’re willing to spend. If you have any left over then treat yourself. 🙂

It can be a pain and time consuming, for sure, grocery shopping in a couple different places so make sure you have a free afternoon when you go. And enjoy it! Spend time browsing! Or bring a friend to make the task a little more fun.

Grocery-Outlet-Lewiston

I personally shop at a farm stand, and often times I don’t make it to the Grocery Outlet store because it literally is across town whereas Wal-Mart is across the parking lot. So I tend to get lazy about it, and it affects the amount I spend because Wal-Mart while cheaper is still not as cheap as the Grocery Outlet. Plus, I don’t actually like Wal-Mart very much.

Then there are products that you need to go to a Grocery Store for – I try to get these products from Trader Joe’s when I can, but Trader Joe’s isn’t close to my house at all. So I go to Safeway, but they are expensive and I don’t like spending a lot of money there because I feel like I don’t get very much in return.

Breakfast!

Well today was so icy out that my car door was frozen shut. I tried to make it to school, but driving a Mustang in the ice just isn’t pleasant so I turned around.

On the other hand, I did have a good breakfast!

I’m not a huge breakfast fan – as in I don’t really like eating after I get up, makes me feel ill. But I’m always up for fruit. 🙂

So I had an orange, a honey crisp apple with a sprinkling of cinnamon, and a chai tea.

Today I  need to catch up on chores and reading for my Biology class, but I’m hoping to get in some pleasure reading too. Maybe play the Sims 3, which I am embarrassingly addicted to.

Now it Begins

Now it begins. My boyfriend left for Alaska for approximately 6 weeks, and at the same time it’s the start of my diet which you can read about in the My Diet above.

I stopped by Trader Joe’s and stocked up on a few things including this new hummus – dairy free – salad dressing that I’m hoping is really good. I also stopped by Barnes & Noble and bought a book and a 2013 planner.

On my way back from Seattle nothing too interesting happened.  Though when I got home I found that one of my dogs, Ruger, cut his ear somehow but of course I didn’t notice until he got it all over both the kitchen and myself. =/ Not exactly a pleasant welcome home.

For lunch, which I accidently forgot to take a photo of, I quickly whipped up a veggie stir-fry that included onion, garlic, kale, yellow pepper, broccoli, and carrots. I put a little bit of olive oil in there, and then used a little water to make sure it didn’t stick to the bottom of the pan.

I love olive oil, but I tend to forget it certainly packs a lot of calories.
